EID SPECIAL KIMAMI SEWAIN
As EID is just few days away I decided to share one of the most delicious sewiyan recipe with you all.This sewaiyan is an amazing traditional dessert.The recipe which I am going to share is the recipe of my grand mom in law..passed on to me by my mother in law.
There are many different ways in which this sewaiyan is made..even at my mom's place its made in a different way.
But this recipe is the one which I love making as it is super easy and comes out perfect all the time.
So lets get started with the recipe-
For making this KIMAMI SEWAIYAN we will use banarsi sewain...the one which we used for making SHEER KHURMA.
PREP TIME-15-20 MINS
COOKING TIME-1 TO 1 1/2 HOURS
SEWAIYAN- 3 CUPS
MILK- 3 CUPS
SUGAR- 6 CUPS
RAISIN- 1/4 CUP
GHEE- 1/2 CUP
GREEN CARDAMOM-5 OR 6
KEWRA- FEW DROPS
TAKE A BIG PAN ADD GHEE TO IT.ONCE GHEE IS WARMED ADD GREEN CARDAMOM TO IT AND WHEN IT BECOMES FRAGRANT ADD SEWIAYAN TO IT.
ROAST SEWAIYAN TILL THE RAW SMELL OF SEWAIYAN GOES AWAY AND IT BECOMES DEEP GOLDEN.
ONCE YOUR SEWAIYAN IS NICELY ROASTED ADD MILK TO IT AND COOK FOR 10 TO 15 MINUTES OR TILL SEWAIYAN ARE SOFT.
ONCE SEWAIYAN ARE SOFT ADD 6 CUPS OF SUGAR TO IT.THE RATIO IS 1 IS TO 2.
MEANT IF YOU HAVE 1 CUP SEWIAYAN ADD 2 CUPS OF SUGAR.
AFTER ADDING SUGAR LET IT COOK ON LOW FLAME TILL SUGAR DISSOLVES COMPLETELY.A SHEERA IS MADE..WHICH IS CALLED KIMAM IN URDU.SINCE THE SUGAR IS DOUBLE IN QUANTITY IT WILL GIVE A NICE KIMAM.
LET IT COOK TILL YOU ACHIEVE THE DESIRED KIMAM.
ONCE YOUR KIMAMI SEWAIYAN IS COOKED ADD DRY FRUITS TO IT AND MIX IT.
TAKE OUT IN A SERVING BOWL AND DECORATE WITH FEW CHOPPED DRY FRUITS.
ITS READY TO BE SERVED.
